Cooking in a Camper

The only reason why we haven't starved since buying the house and moving into the camper is because we have awesome friends. Pam and Dale and Matt and Alissa have cooked us many, many delicious meals. And we have gobbled them all down!

Monday I decided it was time to cook a real meal in the camper. My previous cooking experience in the camper has only involved reheating pizza, serving granola and making grilled cheese sandwiches. But now I have kicked it up a notch and made a meal in the slow cooker.

I made meatballs with chutney sauce served over couscous and it turned out delicious. The only hard part was trying to find enough space to prep the food, saute the meatballs, situate the slow cooker, wash the dishes and dry them. I was still able to make it work.

Today I have plum pork tenderloin cooking in the slow cooker. I hope it's as good as the meatballs.

  1. Good job! Looks like you have just one sink in the camper - that's a bummer. Not sure how to remedy that one. Guess you just wash everything and then rinse everything and then dry everything. The biggest challenge we have in our camper is to keep the counter space as clear as possible.

    I have some slow cooker recipes that I use to use all the time when I worked. I'l send them to you.

    1. Yeah, keeping our one counter clear has been challenging. That's why I put my overflow on the bench, haha.

      I would love some more slow cooker recipes. They are so magical, especially after working on the house until dark and after being at work all day. When we get to the camper there is a meal waiting for us :)
